The Opportunity:
Hatching Dragons Westminster is on the hunt for a superior line cook / chef to take up its international cuisine and cook for our wonderful nursery school community in the heart of Pimlico. Averaging 30-40 covers / service (children ages 6 months through to 5 years), plus staff catering for the team of 12, the chef needs to be able to follow our menu planning developed by our head chef, Jane, touching on a different regional cuisine each month whilst still closely adhering to the principles of the Health Eating Plate from the Eatwell Guide and the principles of infant, toddler and preschool children from the British Nutrition Foundation. You'll be working 30 hours / week, 0800-1400, Monday to Friday.

What you'll do for us: Responsible for:
- Maintaining the kitchen and delivering on all EHO requirements under Safer Catering Better Business policies and procedures
- Delivering on our H&S / EHO practice guides and policies
- Managing all dietary / allergy records for children, their schedules and food prep / planning
- Ensuring cross contamination risk is contained in line with Food Standards Agency guidelines
- Delivering breakfast (0800-0900) / mid-morning snacks (1015-1030) / lunch service (1200-1300) / mid-afternoon snack (1430-1445, pre-prepped to be collected by staff) and tea time (pre-prepped to be heated and collected by staff for service at 1645-1730) menu plans as outlined by our head chef
- Ensuring all food prep is labelled, properly stored and sealed in line with EHO guidance
- Clean up and wash of pots / pans / appliances in line with EHO guidelines at the end of service
- Delivering 4-5 ratings from EHO inspections
- Delivering 85%< approvals from our parent community and staff on menus and food prepared
- Completing 100% of compliance tasks set in Workast (task management platform)
- Ensuring service is on time
- undertaking a cookery club with the kids to educate them into healthy eating habits, food prep and diet
Who you Are: Person Spec
- A clean freak - you believe in the importance of organisation and cleanliness and run a tight ship in the kitchen
- A digital adopter - able to use digital apps to mark off compliance check lists and tasks as done
- Detail and process nut - you will need to run a tight routine of food prep, provision and administration and ensure that all records are well maintained
- A culinary curio - you will be interested in regional cuisine and want to experiment and test out new flavours
- Efficient and punctual - you will be on time and execute on time
